Real Men’s Lamb Shanks!

Ingredients: (serves 2 to 4 people)

One whole sheep (plucked)

4 small ‘pickling’ onions

4 smallish potatoes

2 cans of whole peeled tomatoes

2 sticks of celery

2 to 3 heaped tea spoons of crushed garlic

½ to 1 tea spoon of ground salt

2 heaped tea spoons of Mixed herbs

1 heaped tea spoon of Beef stock

1 tea spoon of Cayenne pepper

1 tea spoon of ground Tumeric

½ tea spoon of ground  Cumin

½ tea spoon of Cajun seasoning

1 cup of red wine

½ to 1 cup of water

1 large pot

1 large hungry carnivorous pet (optional)


Peel and slice two onions; place in pot with crushed garlic and salt

Place pot on stove over medium heat until onion is golden brown, stirring occasionally

Trim shanks from plucked sheep; give sheep carcass to hungry pet

Place shanks in pot and cover; turn occasionally until lightly brown

Mix the Mixed herbs, Beef stock, Cayenne pepper, Tumeric, Cumin and Cajun into the red wine: pour over lamb shanks in the pot; bring to boil and let simmer for 3 or 4 minutes

Peel and chop potatoes into quarters

Peel and half remaining two onions

Wash and chop celery

Remove lids from tinned tomatoes

Place potatoes, onions and chopped celery and tinned tomatoes (out of their tins) into pot

Pour in water to just cover ingredients in the pot

Cover and bring to boil then let simmer for about 1 hour, stirring occasionally

Remove from heat, place in a bowl with plenty of the juices, potatoes, onions and stuff and serve with bread. Enjoy!
